Step By Step Guide – How To Make Chikki At Home
1. For chikki recipe measure out one cup of peanuts and add them to the pan.

2. Dry roast these peanuts on slow to medium flame while stirring continuously.

3. The peanuts have to be dry roasted until the skin separates and the peanuts become golden in color.

4. Once the peanuts are dry roasted, keep them aside to cool.
5.When the peanuts cool down completely, crush them with your hands and remove their skin.

6. Separate the skin from the peanuts.

7. Keep a plate, knife and rolling pin greased and also keep a bowl of cold water nearby to check the consistency of the jaggery syrup.

8. Add 2 tsp water to the pan because this water help the jaggery to melt.

9. Now add 1 cup jaggery to the pan.

10. Now melt this jaggery on slow to medium heat.

11. Keep stirring continuously until the jaggery melts.

12. The jaggery syrup has now started boiling and bubbles have started appearing in it. Cook it till it becomes a little thick.

13. Keep checking the consistency of the jaggery syrup. For this, put a drop of syrup in a bowl of cold water.

14. Check the drop of jaggery syrup in the bowl. This drop is still stretching, it means the syrup is not ready, it has to be cooked further.

15. Cook the jaggery syrup while stirring continuously. Keep checking the jaggery syrup. If the jaggery syrup is still stretchy in the bowl of water then it is not the consistency we want.

16. Lower the gas flame because now we have come to the stage which we need. Then check the syrup again. If a drop of jaggery is added to water it immediately becomes like a stone, then the jaggery syrup is completely ready.

17. If you do not get this stage then continue cooking until the jaggery syrup becomes hard after adding it to the water.
If you still do not get this stage, then use this jaggery syrup for some other recipe because this syrup will not make good chikki.
18. Now add one teaspoon ghee in this syrup and mix it well.

19. Immediately after mixing ghee, add peanuts to the jaggery syrup.

20. Mix the peanuts in syrup quickly and transfer them to a greased plate.

21. Give it a rectangle shape with a greased rolling pin. You can keep it as thin or thick as you want.

22. You can add some pistachio for garnishing (optional) .

23. Roll it again .

24. Mark it when it is hot.

25. Cut when it is still warm.

27. Cool it completely and store it in an air tight container.
